Boiled Chocolate Cake – Family Favourite

Mum has been making this family favourite forever. Tried and true. It’s the only moist chocolate cake the kids and grand kids love. This recipe was given to her by my Aunty, 40 years ago. In turn it was given to my Aunty by a Home Economics teacher.

By chance, many moons ago, she also found it in the Women’s Weekly Chocolate Cakes book while at a grocery shop. She opened the book and saw the word ‘family’ in the title. When she read further, she realised it was the same recipe. My family of seven grew up on this ‘Boiled Family Chocolate Cake’. Our ages span from 42 to 55, which gives you even more of an idea how long it’s been around.

Ingredients

  • 2 cups (500ml) water
  • 3 cups (660g) caster sugar
  • 250g butter, choppedimg_8873
  • 1/3 cup (35g) cocoa powder
  • 1 tspn bicarbonate of soda
  • 3 cups (450g) SR flour
  • 4 eggs, beaten lightly

Note

* Mixture needs to cool to room temperature after boiling, before adding flour and egg.

Method

  1. Preheat oven to moderate (180 C). Grease baking dish (26.5cm x 33cm) and line base with baking paper.
  2. COMBINE water, sugar, butter and combined sifted cocoa powder and soda in medium saucepan. Stir over heat, without boiling, until sugar is dissolved.
  3. Next bring to boil, then reduce heat; simmer, uncovered for 5 minutes. Transfer mixture to large bowl; *cool to room temperature.
  4. ADD flour and egg to bowl; beat with electric mixer until mixture is smooth and changed to a paler colour. Pour mixture into prepared baking dish.
  5. BAKE cake in moderate oven about 50 minutes. Stand cake in baking dish 10 minutes covered with teatowel before turning onto wire rack; turn cake topside up to cool. Spread cold cake with topping.

2 TOPPING VARIATIONS

1. Pure Melted Chocolate Topping

  • 1 packet button melts (200-250g)
  • 1/2 cup cream or 2 tablespoon butter (monitor consistency/spreadable)

Melt and stir in double saucepan (one saucepan with water over heat, other saucepan on top with ingredients).

Spread all over with back of spoon.

2. Fudge Frosting

  • 90g butter
  • 1/3 cup (80ml) water
  • 1/2 cup caster sugar
  • 1 1/2 cup (240g) icing sugar mixture
  • 1/3 cup (35g) cocoa powder

Combine butter, water and caster sugar in small saucepan. Stir over heat, without boiling, until sugar dissolves. Sift icing sugar and cocoa powder into small bowl. Then gradually stir in hot butter mixture. Cover, refrigerate about 20 minutes or until frosting thickens. Beat with wooden spoon until spreadable.

  1. Ooooh yum! Our family favourite is the ‘Simplicity chocolate cake’ recipe from Nursing Mothers Association of Australia cookbook. It’s decades old! We’ve added a dollop of yoghurt to the recipe for moistness. I love your icing recipe. I’ll give that a try next time 🙂

  2. My mum used to make this cake a LOT when i was a kid, but usually a huge rectangle shape. She iced it with chocolate icing and sprinkled with coconut. She used to make it for her work mates, and my brother would always complain that she cut the crusts off and we got that, then she took the best bit to work!
